Valorization and uses of avocado waste

Rafael Gomes Araujo: Avocado is a very complete fruit because it contains iron, monounsaturated fatty acids, known as omegas, which are very important for the regulation of cholesterol and prevention of cardiovascular problems. It contains many minerals, fibers that allow regulating sugar levels and intestinal flora. It has many antioxidants that are important for good health, as well as various applications such as in the cosmetic area in hair or dermatological treatments. In addition, from this fruit we obtain residues that are not used and are also very important because they contain many phenolic compounds that result in antioxidant activity and functional ingredients can be obtained for application in the food industry.
