The Mexican Association of Food Sciences, AMECA, AC, arises from the experience of teamwork by a group of professionals from the Autonomous University of Coahuila, the Technological Institute of Durango and the Autonomous University of Nuevo León, in the organization of the Congress « Food Science and Food Biotechnology in Developing Countries ”, an event that was held in the city of Durango from June 20 to 24, 2004.

The aforementioned group considered the need for a scientific association that would bring together professionals who develop in any of the Food Sciences in order to become an entity that would actively participate in the different governmental areas.

The Mexican Association of Food Sciences, AMECA, AC, was established in November 2005 with Deed No. 115534 registered in the City of Durango, but nationally, with the purpose of offering its services through its members, of all kinds of support to the different sectors of society, in the search for solutions to achieve a better social, economic and industrial level.

Once this Association has been created, hoping that it be recognized as a body for consultation, advice and promotion of initiatives to achieve a healthier diet with a guarantee of food safety; likewise, in the development of healthy food products that strengthen the industrial sector and promote research and technological development.

The association’s congress, initially called Food Science and Food Biotechnology in Developing Countries, has been organized eight times biannually under the coordination of the Mexican Association of Food Sciences (AMECA) and higher education institutions. The second congress was held in Saltillo, Coahuila, on October 15-18, 2006, under the coordination of the Autonomous University of Coahuila. The third edition was held in Querétaro, Querétaro on October 14-17, 2008, with the coordination of the Autonomous University of Querétaro. Boca del Río, Veracruz, was the venue for the fourth congress from November 30 to December 2, 2010, with the coordination of the Technological Institute of Veracruz.

As of the fifth version, which was held in the City of Nuevo Vallarta, Nayarit, the organization has been under the coordination of AMECA. Monterrey, Nuevo León, was the venue for the sixth event, which was called 6th Food Science, Biotechnology and Safety, while the seventh event, based in Cancun, Quintana Roo, was organized in conjunction with the Mexican Association for Food Protection (AMEPAL) and the International Association for Food Protection, calling itself Latin Food (7th Food Science, Biotechnology and Safety & IAFP’s 5th Latin American Symposium in Food Safety). The eighth congress was called Latin Food 2018 and was held in Puerto Vallarta, Jalisco. Each of the congresses organized by AMECA has received, on average, 900 participants and 380 papers presented by national and foreign researchers. As a result of these events, AMECA has published a series of books on food science and biotechnology topics.
